Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 1 large egg
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons butter
- 1 cup strawberries
- 2 scoops vanilla ice cream

In a large bowl, whisk together 1 cup flour, 2 tsp baking powder, and 1/2 tsp salt. In another bowl, beat 1 egg with 1 cup milk and 1 tbsp melted butter.

Pour the wet ingredients into the dry and stir until just combined; the batter should be slightly lumpy. Do not overmix.

Heat a nonstick skillet over medium heat and melt 1 tbsp butter. Pour 1/4 cup batter per pancake and cook until bubbles form on the surface, about 2-3 minutes.

Flip and cook until golden brown on the other side, about 1-2 minutes. Repeat with remaining batter, adding more butter if needed.

Slice 1 cup strawberries. Stack the pancakes on a plate, top with strawberries and 2 scoops of vanilla ice cream.
