Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup milk
  • 1 large egg
  • 1 cup blueberries
  • ¼ cup maple syrup

Instructions

    In a medium bowl, whisk together 1 cup flour and 1 tsp baking powder. In a small bowl, beat 1 egg with 1 cup milk, then stir into the flour mixture until just combined (a few lumps are fine).

    Heat a lightly oiled griddle or large skillet over medium heat. Pour about 1/4 cup batter per pancake and cook until bubbles form on the surface, about 2-3 minutes.

    Flip and cook until golden brown on the other side, about 1-2 minutes. Repeat with remaining batter, keeping cooked pancakes warm.

    In a small saucepan, combine 1 cup blueberries and 1/4 cup maple syrup. Cook over medium heat, stirring occasionally, until the berries burst and the syrup thickens slightly, about 5 minutes.
