Ingredients

  • 1 lb pork tenderloin
  • 4 slices bacon
  • 1 large onion
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Slice the 1 lb pork tenderloin into 1-inch thick medallions. Season both sides with the 1/2 tsp salt and 1/4 tsp black pepper.

    Cook the 4 slices bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer bacon to a plate, leaving the drippings in the pan.

    Add the 1 tbsp olive oil to the skillet. Sear the pork medallions in a single layer over medium-high heat until golden brown and cooked through, about 3-4 minutes per side. Remove and set aside.

    Reduce heat to medium. Add the 1 large onion, sliced into rings, to the same skillet. Cook, stirring occasionally, until soft and caramelized, about 8-10 minutes.

    Return the pork and bacon to the skillet with the onions. Toss everything together for 1-2 minutes until heated through. Serve hot.
