Pad See Ew with Pork

Ingredients

  • 8 oz wide rice noodles
  • ½ lb pork shoulder or loin, thinly sliced
  • 2 cups broccoli florets
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 3 tbsp vegetable oil

Instructions

    Soak the 8 oz wide rice noodles in hot water until pliable, about 20 minutes, then drain. They should bend easily but still be firm.

    In a small bowl, mix 3 tbsp soy sauce, 2 tbsp oyster sauce, and 1 tbsp brown sugar (if you have it) until the sugar dissolves.

    Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add the 0.5 lb pork and stir-fry until browned, about 3 minutes. Remove and set aside.

    Add the remaining 1 tbsp oil, then the 1 sliced onion and 3 minced garlic cloves. Stir-fry until fragrant, about 1 minute.

    Add the 2 cups broccoli and 2 tbsp water. Cover and steam until bright green and crisp-tender, about 2 minutes.

    Return the pork to the pan, add the drained noodles and the sauce. Toss everything over high heat until the noodles are coated and slightly charred, about 2 minutes.

    Serve hot, sprinkled with sesame seeds if you have them.
