Ingredients
- 1.5 lbs pre-cooked oxtail (from a can or deli), drained
- 2 cans (15 oz each) butter beans (canned), drained and rinsed
- 1 can (14.5 oz) diced tomatoes (canned)
- 1 cup beef broth
- 1 medium yellow onion, chopped
- 1 tbsp hot sauce (Frank's or similar)
- 3 sprigs fresh thyme sprigs (or 1 tsp dried)

Heat olive oil in a large pot over medium-high heat. Add onion and cook, stirring, until softened, ~3 minutes.

Add oxtail, butter beans, tomatoes with juice, broth, hot sauce, and thyme. Stir to combine.

Bring to a low simmer and cook for 12–15 minutes until flavors meld and broth thickens slightly.

Taste and adjust salt, pepper, and hot sauce. Discard thyme sprigs.
