Ingredients

  • 1.5 lbs pre-cooked oxtail (from a can or deli), drained
  • 2 cans (15 oz each) butter beans (canned), drained and rinsed
  • 1 can (14.5 oz) diced tomatoes (canned)
  • 1 cup beef broth
  • 1 medium yellow onion, chopped
  • 1 tbsp hot sauce (Frank's or similar)
  • 3 sprigs fresh thyme sprigs (or 1 tsp dried)

Instructions

    Heat olive oil in a large pot over medium-high heat. Add onion and cook, stirring, until softened, ~3 minutes.

    Add oxtail, butter beans, tomatoes with juice, broth, hot sauce, and thyme. Stir to combine.

    Bring to a low simmer and cook for 12–15 minutes until flavors meld and broth thickens slightly.

    Taste and adjust salt, pepper, and hot sauce. Discard thyme sprigs.

    Ladle into bowls and serve hot with cornbread or over rice if desired.
