Ingredients
- 2.5 cups all-purpose flour
- ½ cup butter, softened
- 1 cup packed brown sugar
- 2 large eggs
- 2 tsp ground cinnamon, nutmeg, and cloves (or apple pie spice)
- 2 tsp baking powder
- ¼ tsp salt

Preheat oven to 350°F. Grease a 9-inch loaf pan and line the bottom with parchment paper.

In a small bowl, whisk together flour, baking powder, spices, and salt.

In a large bowl, beat butter and brown sugar until light and fluffy, about 3 minutes.

Add eggs one at a time, beating well after each addition until combined.

Fold in flour mixture until just combined—don't overmix. The batter should look thick and uniform.

Pour batter into prepared pan and smooth the top with a spatula.
