Ingredients

  • 2.5 cups all-purpose flour
  • ½ cup butter, softened
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp ground cinnamon, nutmeg, and cloves (or apple pie spice)
  • 2 tsp baking powder
  • ¼ tsp salt

Instructions

  1. 1

Preheat oven to 350°F. Grease a 9-inch loaf pan and line the bottom with parchment paper.

  2. 2

In a small bowl, whisk together flour, baking powder, spices, and salt.

  3. 3

In a large bowl, beat butter and brown sugar until light and fluffy, about 3 minutes.

  4. 4

Add eggs one at a time, beating well after each addition until combined.

  5. 5

Fold in flour mixture until just combined—don't overmix. The batter should look thick and uniform.

  6. 6

Pour batter into prepared pan and smooth the top with a spatula.

  7. 7

Bake 35–40 minutes until a toothpick inserted in the center comes out clean.

  8. 8

Cool in pan 10 minutes, then turn out onto a wire rack to cool completely.

  9. 9

Slice and serve warm or at room temperature with butter and jam if desired.
