Ingredients
- 2 large onions
- 1 cup chickpea flour
- 2 tbsp rice flour
- ¼ cup fresh cilantro
- ½ tsp turmeric
- ½ tsp chili powder
- 1 tsp salt
- 2 cups vegetable oil

Thinly slice the 2 large onions and place in a large bowl. Add the 1 cup chickpea flour, 2 tbsp rice flour, 1/4 cup chopped cilantro, 1/2 tsp turmeric, 1/2 tsp chili powder, and 1 tsp salt. Mix well with your hands, squeezing the onions to release moisture and form a sticky batter. If too dry, sprinkle with 1-2 tbsp water.

Heat the 2 cups vegetable oil in a deep pan over medium-high heat until a tiny piece of batter sizzles and floats, about 350°F (175°C).

Drop spoonfuls of the batter into the hot oil, about 4-5 at a time, without crowding. Fry until golden brown and crispy, turning occasionally, about 4-5 minutes per batch.

Remove the bhajis with a slotted spoon and drain on paper towels. Repeat with remaining batter.
