Ingredients

  • 1 lb pork belly, sliced 1/4-inch thick
  • 14 oz firm tofu, cut into 1-inch cubes
  • ⅓ cup soy sauce
  • 3 tbsp mirin (sweet rice wine)
  • 1 cup dashi or chicken broth
  • 1 tbsp ginger, sliced into thin matchsticks
  • 2 whole scallions, cut into 1-inch pieces

Instructions

  1. 1

Heat a heavy pot or Dutch oven over medium-high. Add pork in a single layer without crowding.

  2. 2

Cook until pork is browned on both sides and fat renders, ~3 minutes per side. Stir occasionally.

  3. 3

Pour soy sauce, mirin, and dashi into the pot. Add ginger slices. Bring to a simmer.

  4. 4

Slide tofu cubes into the simmering broth, keeping them intact. Simmer uncovered for 8 minutes.

  5. 5

Taste the broth. Add a pinch more salt or soy sauce if needed. Scatter scallions over the top.

  6. 6

Serve hot in shallow bowls with broth spooned over pork and tofu.
