Ingredients
- 1 lb pork belly, sliced 1/4-inch thick
- 14 oz firm tofu, cut into 1-inch cubes
- ⅓ cup soy sauce
- 3 tbsp mirin (sweet rice wine)
- 1 cup dashi or chicken broth
- 1 tbsp ginger, sliced into thin matchsticks
- 2 whole scallions, cut into 1-inch pieces

Heat a heavy pot or Dutch oven over medium-high. Add pork in a single layer without crowding.

Cook until pork is browned on both sides and fat renders, ~3 minutes per side. Stir occasionally.

Pour soy sauce, mirin, and dashi into the pot. Add ginger slices. Bring to a simmer.

Slide tofu cubes into the simmering broth, keeping them intact. Simmer uncovered for 8 minutes.

Taste the broth. Add a pinch more salt or soy sauce if needed. Scatter scallions over the top.
