Ingredients

  • 2 cups cooked jasmine rice
  • 6 oz ground beef
  • 6 oz shrimp, peeled and deveined
  • 2 whole eggs
  • 3 tbsp sambal oelek or chili paste
  • 3 tbsp crispy fried shallots
  • ½ whole cucumber, thinly sliced

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high heat. Cook ground beef, breaking it apart with a spoon, until no pink remains, about 5 minutes.

    Push beef to the side. Add shrimp to the empty space and cook until pink and firm, about 2 minutes per side. Stir beef and shrimp together.

    Transfer beef and shrimp to a plate. Wipe the skillet and add 1 tbsp oil over medium-high heat. Crack both eggs into the pan and fry until whites set but yolks still jiggle, about 3 minutes.

    Divide rice between two bowls. Top each with beef, shrimp, and one fried egg. Dollop sambal on the side.

    Scatter fried shallots and cucumber slices over each bowl. Serve hot.
