Ingredients
- 2 cups cooked jasmine rice (day-old, chilled)
- 2 whole eggs
- 3 tbsp dried anchovies (ikan teri)
- 2 tbsp sambal oelek or chili paste
- 1.5 tbsp soy sauce
- 2 whole shallots, thinly sliced
- ½ whole fresh lime (for squeezing)

Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

Fry anchovies until fragrant and crispy, stirring often, about 3 minutes. Transfer to a plate.

Add shallots to the same skillet and fry until golden and crispy, about 2 minutes.

Add rice, breaking up clumps with a spoon, then stir-fry for 3 minutes until heated through.

Drizzle sambal and soy sauce over rice, toss until coated evenly, about 1 minute.

Push rice to the side of the skillet. Crack eggs into the empty space and fry until whites set, yolks still jiggle, about 3 minutes.

Divide rice between two bowls. Top each with a fried egg, scatter crispy anchovies and shallots on top, squeeze lime over everything.
