Ingredients
- 2 lb mussels
- 1 cup white wine
- 1 medium onion
- 3 cloves garlic
- 2 tbsp butter
- ¼ cup fresh parsley

Scrub the 2 lb mussels and pull off any beards. Discard any that are open and don't close when tapped.

Melt the 2 tbsp butter in a large pot over medium heat. Add the 1 sliced onion and 3 minced garlic cloves; cook until soft, about 5 minutes.

Pour in the 1 cup white wine and bring to a boil. Add the mussels, cover, and cook until they open, about 5-7 minutes, shaking the pot once.

Stir in the 1/4 cup chopped parsley. Discard any unopened mussels and serve immediately with crusty bread.
