Multekrem
A classic Scandinavian cloudberry cream dessert—tart berries folded into billowy whipped cream and topped with meringue. Light, elegant, and ready in 15 minutes.

Ingredients
- 1 cup heavy cream, cold
- 2 tablespoons powdered sugar
- 1.5 cups cloudberries (or yellow raspberries), fresh or frozen
- 2 large egg whites
- ¼ teaspoon salt

Pour the cold heavy cream into a medium bowl and use a whisk to beat it in circular motions, lifting the whisk up and out of the cream repeatedly, until it thickens and forms soft peaks that flop over when you lift the whisk, about 3–4 minutes.

Sprinkle 2 tablespoons of powdered sugar over the whipped cream and use the whisk to gently stir it in with a few light circular motions until no white streaks remain and the cream looks slightly thicker and sweeter, about 30 seconds.

Measure out 1.5 cups of cloudberries and pour them into the bowl with the whipped cream, reserving about 4 tablespoons in a separate small bowl for topping later.

Use a rubber spatula to gently fold the berries into the cream by lifting the cream from the bottom of the bowl up and over the berries, rotating the bowl a quarter turn and repeating, until the berries are loosely mixed throughout, about 8–10 folds.

Pour the 2 egg whites and 0.25 teaspoon of salt into a separate, spotlessly clean bowl and use a clean whisk to beat in rapid circular motions for 3–4 minutes until the mixture turns white, becomes thick like shaving cream, and forms stiff peaks that stand straight up when you lift the whisk.

Using a clean rubber spatula, lift the egg white mixture onto the top of the berry-cream mixture, then fold it in using the same lifting-and-rotating motion (bottom up and over the top, quarter turn, repeat) until no white streaks are visible, about 6–8 folds.

Divide the multekrem equally among four serving bowls or glasses, spooning it carefully so the layers stay visible and airy.

Scatter the reserved 4 tablespoons of cloudberries evenly over the top of each serving as a garnish, pressing them gently into the surface but not stirring.
