- ¾ cup sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk
- ½ cup vegetable oil
- 1 large egg
- 2 tablespoons butter

Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners.

In a large bowl, whisk together 2 cups flour, 3/4 cup sugar, 2 tsp baking powder, and 1/2 tsp salt.

In a separate bowl, whisk 1 cup milk, 1/2 cup oil, and 1 egg until combined.

Pour wet ingredients into dry and stir with a spatula until just moistened; batter should be lumpy, do not overmix.

Divide batter evenly among liners, filling each about 2/3 full.

For topping, mix 2 tbsp softened butter with 1/4 cup flour and 2 tbsp sugar until crumbly; sprinkle over batter.
