Moroccan Grilled Sardines

Fresh sardines are grilled over charcoal or high heat with a bright harissa-lemon marinade, aromatic cumin, and fresh cilantro. A showstopper dinner ready in under 30 minutes.

Ingredients

  • 6 whole fresh sardines, whole
  • 2 tbsp harissa paste
  • 3 tbsp olive oil
  • 1 whole lemon (juiced)
  • ½ tsp ground cumin
  • 1 to taste salt and pepper
  • ¼ cup fresh cilantro, roughly chopped

Instructions

    Pat sardines dry inside and out with paper towels.

    Whisk harissa, olive oil, lemon juice, and cumin in a small bowl.

    Rub marinade all over sardines, inside cavity and out. Season with salt and pepper.

    Heat grill to high or place grill pan over medium-high until very hot, ~3 minutes.

    Grill sardines 2.5 minutes per side without moving. Skin should blister; flesh flakes easily.

    Transfer to a platter. Scatter cilantro over top and serve immediately.
