Ingredients
- 1 fish (about 1.2 kg / 2.5 lbs) whole snoek, cleaned and gutted
- 3 tbsp olive oil
- 1 whole lemon
- ½ tsp red chili flakes
- 2 tbsp fresh herbs (parsley or dill, chopped)
- 1 pinch sea salt and black pepper to taste

Heat the braai (charcoal grill) until coals are glowing and hot, about 10 minutes. Pat the snoek dry inside and out.

Rub the fish inside and out with 2 tbsp olive oil, then season generously with salt, black pepper, and chili flakes.

Place snoek directly on the grill grate over hot coals. Cook 6–7 minutes per side without moving until the skin chars and the flesh flakes easily.

Transfer to a serving plate. Drizzle with remaining olive oil and a squeeze of fresh lemon juice.

Scatter fresh herbs over the top. Serve hot with extra lemon wedges on the side.
