Ingredients

  • 1.5 lb pork shoulder, cut into 1-inch cubes
  • ¾ cup coconut milk
  • 4 cloves garlic, minced
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 whole lime
  • 1 tbsp vegetable oil
  • 1 pinch salt and pepper to taste

Instructions

    Soak bamboo skewers in water for 20 minutes while you prep the pork.

    Stir together coconut milk, garlic, fish sauce, and brown sugar in a bowl.

    Toss pork cubes with the marinade. Refrigerate for at least 15 minutes.

    Thread pork onto skewers, leaving small gaps between cubes for even cooking.

    Heat grill or grill pan to medium-high. Brush with oil to prevent sticking.

    Grill skewers 2–3 minutes per side until edges are charred and meat is cooked through.
