Ingredients
- 1 lb pork tenderloin
- 2 tbsp fresh ginger
- 3 cloves garlic
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 8 oz cooked noodles
- ¼ cup peanuts

Slice the 1 lb pork tenderloin into thin strips. Peel and mince the 3 garlic cloves and 2 tbsp ginger.

In a small bowl, mix 3 tbsp soy sauce, 2 tbsp oyster sauce, and 1 tbsp brown sugar until the sugar dissolves.

Heat a wok or large skillet over high heat. Add 1 tbsp oil and sear the pork in a single layer until browned, about 3 minutes per side. Remove and set aside.

In the same pan, add the garlic and ginger. Stir-fry until fragrant, about 30 seconds. Return the pork to the pan.

Pour the sauce over the pork and stir to coat. Cook until the sauce thickens and clings to the meat, about 2 minutes.

Divide the 8 oz cooked noodles among bowls. Top with the pork and sauce. Garnish with 0.25 cup crushed peanuts and chopped green onions or herbs if you have them.
