Ingredients

  • 1.25 lb ground beef
  • ¾ cup jarred mole paste
  • 1 cup beef broth
  • 1 medium yellow onion, diced
  • 1 large poblano pepper, diced
  • 1 whole lime
  • ¼ cup fresh cilantro, chopped

Instructions

    Heat oil in a large skillet over medium-high. Add ground beef, breaking it up with a spoon, until no pink remains, ~6 minutes.

    Add onion and poblano to the skillet. Cook, stirring, until peppers soften, about 4 minutes.

    Stir in mole paste and beef broth until smooth. Simmer for 5 minutes until the sauce thickens slightly and darkens.

    Squeeze lime juice over the top. Taste and season with salt and pepper.
