Ingredients

  • 1.25 lb chicken thighs or breasts, skin-on
  • ¼ cup orange juice
  • 3 tbsp lime juice
  • 4 cloves garlic, minced
  • 4 large stalks green onions
  • 3 tbsp olive oil

Instructions

    Pat chicken dry with paper towels. Season generously with salt and pepper on both sides.

    Whisk orange juice, lime juice, and minced garlic in a small bowl until combined.

    Heat olive oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Lay chicken skin-side down in the skillet without moving for 6 minutes until skin is golden and crispy.

    Flip chicken, pour the mojo sauce around (not over) the chicken, then cook 5–6 minutes until cooked through.

    Push chicken to the side, add green onions cut-side down to the skillet, char 2 minutes, then serve hot.
