Ingredients
- 2 lb chicken breasts, boneless skinless
- ¼ cup lime juice
- 4 clove garlic, minced
- 1 tsp cumin
- 1 lb asparagus spears
- 2 medium whole tomatoes
- ½ cup pickled peppers (mojo peppers)
- 3 tbsp olive oil
Instructions

Mix lime juice, garlic, cumin, salt, and pepper in a bowl. Pat chicken dry and coat both sides with the mojo mixture.

Heat 2 tbsp olive oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Sear chicken 6–7 minutes per side without moving until golden and internal temp reaches 165°F.

Transfer chicken to a plate. Add remaining 1 tbsp oil to the skillet, then sear asparagus and tomato 3–4 minutes until charred.
