Ingredients

  • 1 cup all-purpose flour
  • ¾ cup mochiko (sweet rice flour)
  • ⅓ cup granulated sugar
  • 1.5 tsp baking powder
  • 1 large egg
  • ¼ cup milk
  • ½ tsp vanilla extract
  • 1 tbsp matcha powder
  • 1 cup powdered sugar

    Preheat oven to 350°F. Lightly grease a donut pan with cooking spray.

    Whisk flour, mochiko, sugar, and baking powder together in a medium bowl.

    In a separate bowl, whisk egg, milk, and vanilla until fully combined.

    Pour wet ingredients into dry ingredients. Stir until a thick, sticky batter forms—do not overmix.

    Transfer batter to a piping bag. Pipe into donut pan cavities until 3/4 full.

    Bake for 12–14 minutes until a toothpick inserted into a donut comes out clean.

    Cool in pan for 5 minutes, then turn out onto a wire rack to cool completely.

    Sift matcha powder and powdered sugar together in a small bowl until no lumps remain.

    Add 2–3 tablespoons water and whisk until glaze is smooth and pourable.
