Ingredients
- 12 shells mini tart shells
- 2 medium mango
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 12 leaves mint leaves
- 1 tablespoon white pearl sprinkles

Peel and slice the 2 mangoes into thin strips or small cubes; set aside.

In a chilled bowl, whip the 1 cup heavy cream with the 2 tbsp powdered sugar and 1 tsp vanilla extract until soft peaks form, about 3-4 minutes.

Spoon the whipped cream into the 12 mini tart shells, filling each about three-quarters full.
