Ingredients
- 1 cup millet
- 2 tbsp olive oil
- 1 medium onion
- 2 medium carrot
- 1 medium potato
- 1 tsp ground cumin
- 2 cups vegetable broth
- 1 tsp salt

Rinse the 1 cup millet in a fine-mesh strainer under cold water until the water runs clear; drain well.

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 sliced onion and cook until soft and golden, about 6 minutes.

Stir in the 2 diced carrots and 1 diced potato, and the 1 tsp ground cumin. Cook, stirring, until the vegetables begin to soften, about 4 minutes.
