Ingredients
- 1.5 lb ground beef
- ½ cup breadcrumbs
- 1 large egg
- 1 medium onion
- ½ cup black olives
- ¼ cup fresh parsley
- 1 cup beef broth
- 1 tsp salt

Preheat oven to 375°F. Finely chop the 1 medium onion and 1/4 cup fresh parsley. Slice the 1/2 cup black olives into rings.

In a large bowl, combine the 1.5 lb ground beef, 1/2 cup breadcrumbs, 1 egg, half the chopped onion, half the parsley, and 1/2 tsp salt. Mix until just combined.

Shape the mixture into a loaf and place in a baking dish. Press the sliced olives and remaining parsley onto the top.

Pour the 1 cup beef broth around the loaf, not over the topping. Bake for 40-45 minutes until the internal temperature reaches 160°F and the top is browned.

Let rest for 5 minutes. Slice and serve with the pan juices spooned over. Add black pepper or extra herbs if you like.
