Ingredients
- 1 cup rice
- 6 cups water
- 2 teaspoons matcha powder
- ½ teaspoon salt
- ¼ cup dried seaweed snacks
- 1 tablespoon sesame seeds

Rinse the 1 cup rice in a fine-mesh strainer until the water runs clear. Drain well.

In a large pot, combine the rinsed rice and 6 cups water. Bring to a boil over high heat, then reduce to low and simmer, uncovered, stirring occasionally, until the rice is very soft and the porridge is thick and creamy, about 35-40 minutes.

In a small bowl, whisk the 2 teaspoons matcha powder with 2 tablespoons of hot water from the pot until smooth and no lumps remain.

Stir the matcha mixture and 0.5 teaspoon salt into the congee until the color is evenly green. Taste and adjust salt if needed.

Ladle the congee into bowls. Top each with a sprinkle of the 0.25 cup dried seaweed and 1 tablespoon sesame seeds. Serve hot.
