Ingredients
- 8 oz egg noodles
- 10 oz boneless chicken breast
- 3 tbsp chili paste (sambal oelek)
- 2 tbsp lime juice
- 2 tbsp oyster sauce
- 1 tbsp coconut sugar or brown sugar
- 6 count store-bought chicken satay skewers
- 1 count cucumber
- 1 cup shrimp crackers (prawn crackers)

Boil noodles in salted water until al dente, drain, and set aside.

Slice cucumber into thin rounds. Heat 2 tbsp oil in a large skillet over medium-high.

Pat chicken dry, season with salt and pepper. Sear 5–6 minutes per side until golden and cooked through.

Remove chicken and rest 2 minutes, then slice. In the same skillet, add noodles, chili paste, lime juice, oyster sauce, and sugar.

Toss noodles over medium heat until coated and fragrant, 2–3 minutes. Warm satay skewers in the pan alongside.

Divide noodles between bowls. Top with sliced chicken, satay skewers, cucumber, and a handful of shrimp crackers. Serve hot.
