Ingredients

  • 1 jar (16 oz) jarred grape leaves (drained)
  • 1.5 cups cooked rice (white or brown)
  • ½ cup fresh dill and parsley (chopped)
  • ½ medium yellow onion (finely diced)
  • 2 tbsp tomato paste
  • 3 tbsp lemon juice
  • 3 tbsp olive oil

Instructions

    Mix rice, dill, parsley, onion, and tomato paste in a bowl until well combined, then season generously with salt and pepper.

    Lay a grape leaf flat, shiny side down. Spoon 1 tbsp rice filling onto the leaf near the stem end.

    Fold the stem end over the filling, then fold in both sides, and roll tightly away from you into a cigar shape.

    Repeat with remaining leaves and filling. You should have 12–16 rolls.

    Heat olive oil in a large skillet over medium. Arrange rolls seam-side down in a single layer.

    Drizzle with lemon juice and 3 tbsp water. Cover, reduce heat to low, and warm for 5 minutes until heated through.

    Serve hot, drizzled with pan juices. Pair with yogurt or lemon wedges if desired.
