Ingredients

  • 1 lb pork tenderloin
  • 1 cup pineapple chunks
  • 1 red bell pepper
  • 2 tbsp soy sauce
  • 3 tbsp ketchup
  • 2 tbsp cornstarch

Instructions

  1. 1

Cut the 1 lb pork tenderloin into 1-inch cubes. In a bowl, toss with 1 tbsp cornstarch, 1 tbsp soy sauce, and a pinch of salt and pepper. Set aside.

  2. 2

In a small bowl, mix 3 tbsp ketchup, 1 tbsp soy sauce, 1 tbsp cornstarch, and 1/4 cup water to make the sauce. Set aside.

  3. 3

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the pork in a single layer and cook until browned on all sides, about 5-6 minutes. Do not crowd the pan; work in batches if needed.

  4. 4

Add the 1 cup pineapple chunks and 1 sliced red bell pepper to the skillet. Stir-fry for 2-3 minutes until the pepper is crisp-tender.

  5. 5

Pour the sauce over the pork and vegetables. Stir and cook until the sauce thickens and coats everything, about 1-2 minutes. Serve hot.
