In a small bowl, mix 3 tbsp ketchup, 1 tbsp soy sauce, 1 tbsp cornstarch, and 1/4 cup water to make the sauce. Set aside.

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the pork in a single layer and cook until browned on all sides, about 5-6 minutes. Do not crowd the pan; work in batches if needed.

Add the 1 cup pineapple chunks and 1 sliced red bell pepper to the skillet. Stir-fry for 2-3 minutes until the pepper is crisp-tender.
