Ingredients

  • 1 9-inch pie crust
  • 6 slices bacon
  • 1 medium onion
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup Gruyere cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Preheat oven to 375°F. Fit the 1 pie crust into a 9-inch pie dish, crimping edges. Brush with beaten egg white if desired.

    In a skillet over medium heat, cook the 6 slices bacon until crisp, about 8 minutes. Remove and crumble, leaving 1 tbsp drippings.

    Add the 1 sliced onion to the skillet and cook until soft and golden, about 5 minutes. Let cool slightly.

    In a bowl, whisk the 3 eggs, 1 cup heavy cream, 0.5 tsp salt, and 0.25 tsp pepper until smooth.

    Spread the bacon and onion over the crust, then sprinkle with 1 cup shredded Gruyere. Pour the egg mixture over the top.
