- 6 large eggs
- 12 small corn tortillas
- 1 cup shredded cheese (like Monterey Jack or cheddar)
- 1 cup salsa (store-bought or homemade)
- 2 tbsp vegetable oil
- ½ tsp salt

Heat a large skillet over medium heat. Add the 1 lb longaniza sausage (remove from casings if needed) and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.
