Ingredients

  • 1 lb longaniza sausage
  • 6 large eggs
  • 12 small corn tortillas
  • 1 cup shredded cheese (like Monterey Jack or cheddar)
  • 1 cup salsa (store-bought or homemade)
  • 2 tbsp vegetable oil
  • ½ tsp salt

Instructions

    Heat a large skillet over medium heat. Add the 1 lb longaniza sausage (remove from casings if needed) and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.

    In a bowl, whisk the 6 eggs with the 0.5 tsp salt. Pour the eggs over the cooked sausage in the skillet.

    Stir the eggs and sausage gently over medium heat until the eggs are just set but still soft, about 2-3 minutes. Remove from heat.

    Warm the 12 corn tortillas in a dry skillet or microwave until soft and pliable, about 30 seconds per side.
