Ingredients
- 2 cups water
- ¾ cup sugar
- ¾ cup lemon juice
- 1 tbsp lemon zest

In a small saucepan, combine 2 cups water and 3/4 cup sugar. Bring to a boil over medium-high, stirring until the sugar dissolves completely, about 3 minutes.

Remove from heat and stir in 3/4 cup lemon juice and 1 tbsp lemon zest. Let cool to room temperature, about 10 minutes.

Pour the mixture into a shallow dish (like a 9x13 pan) and freeze for 1 hour, until ice crystals start to form at the edges.

Scrape the mixture with a fork, breaking up the ice crystals. Return to the freezer and repeat scraping every 30 minutes for 2-3 hours, until the granita is fluffy and icy.
