Lemon Garlic Salmon with Pasta

Ingredients
- 1 lb salmon fillet
- 8 oz pasta
- 4 cups spinach
- 3 cloves garlic
- 1 lemon
- 3 tbsp olive oil

Cook the 8 oz pasta in salted boiling water until al dente, about 9 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, season the 1 lb salmon with salt and pepper. Heat 2 tbsp olive oil in a large skillet over medium-high; sear salmon skin-side down until golden, 4-5 minutes. Flip and cook 2-3 minutes until just opaque. Remove and flake into chunks.

Reduce heat to medium. Add remaining 1 tbsp olive oil and 3 minced garlic cloves; cook until fragrant, about 1 minute. Add 4 cups spinach and the juice of 1 lemon; toss until spinach wilts, about 2 minutes.

Add the drained pasta and flaked salmon to the skillet. Toss with a splash of reserved pasta water until everything is coated and glossy, about 1 minute. Season with salt and pepper to taste.
