Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ cup olive oil
  • 2 whole (zested + juiced) lemon
  • 4 whole (minced) garlic cloves
  • 1 tbsp dried oregano
  • 1 to taste salt and black pepper

    Cut chicken breasts into 1.5-inch cubes and place in a bowl.

    Add oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Toss until coated.

    Thread chicken onto metal skewers, dividing evenly between 4 skewers.

    Heat a grill or grill pan to high until you hear a steady sizzle when water flicks on it.

    Grill skewers 3–4 minutes per side without moving, until edges char and meat reaches 165°F.
