  • 1.5 cups rice flour
  • ½ cup tapioca starch
  • ¾ cup sugar
  • 1.5 cups water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 drops food coloring

    In a large bowl, whisk together the 1.5 cups rice flour, 0.5 cup tapioca starch, and 0.75 cup sugar until combined.

    Add the 1.5 cups water, 2 eggs, and 1 teaspoon vanilla extract. Whisk until smooth, about 2 minutes, until no lumps remain.

    Divide the batter evenly into 3 bowls. Add 1 drop of food coloring to each bowl, stirring each to get a uniform color.

    Prepare a steamer and grease a 9-inch round cake pan. Pour one colored batter into the pan, about 1/3 inch thick.

    Steam over medium-high heat for 5 minutes, until the layer is set and no longer wet. Repeat with the remaining batters, steaming each layer for 5 minutes.
