Ingredients

  • 2 rounds pie crust (store-bought or homemade)
  • 4 cups mixed berries (fresh or frozen)
  • ¾ cup sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ cup walnuts, chopped
  • 1 large egg (for egg wash)

Instructions

    Preheat oven to 400°F (200°C). Roll out one pie crust and fit it into a 9-inch pie dish, trimming excess.

    In a large bowl, combine 4 cups berries, 3/4 cup sugar, 3 tbsp cornstarch, and 1 tbsp lemon juice. Stir gently until berries are coated.

    Pour the berry mixture into the pie crust. Sprinkle 1/2 cup chopped walnuts evenly over the filling.

    Roll out the second crust and cut into 1-inch strips. Arrange strips in a lattice pattern over the filling, pressing edges to seal.

    Beat 1 egg with 1 tbsp water and brush over the lattice. Bake for 20 minutes, then reduce heat to 375°F (190°C) and bake until crust is golden and filling is bubbling, about 25-30 minutes more.

    Let cool on a wire rack for at least 30 minutes before slicing, so the filling sets.
