Ingredients
- 1 lb chicken breast
- 4 cups chicken broth
- 4 medium shallots
- 3 cloves garlic
- 1 tsp turmeric
- 2 cups cooked rice

Thinly slice 2 of the shallots and fry in 2 tbsp oil over medium heat until golden and crispy, about 5 minutes. Remove and set aside.

In the same pot, add the remaining 2 sliced shallots and 3 minced garlic cloves. Cook until fragrant, about 2 minutes.

Add 1 tsp turmeric and 1 lb chicken breast. Pour in 4 cups chicken broth. Bring to a boil, then simmer until chicken is cooked through, about 10 minutes.

Remove chicken, shred it, and return to the pot. Season with salt and pepper to taste.

Serve the soup over 2 cups cooked rice, topped with the crispy shallots. Add lime or chili if you like.
