Ingredients

  • 1.5 lb lamb shoulder or leg, cut into 1.5-inch cubes
  • 1 whole (juiced) lemon
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 3 tbsp olive oil
  • 1 medium red onion, cut into 1-inch chunks
  • 3 sprigs fresh rosemary or thyme sprigs

Instructions

    Toss lamb cubes with lemon juice, minced garlic, oregano, and olive oil in a bowl.

    Thread lamb and red onion chunks onto metal skewers, alternating between protein and onion.

    Heat a grill or grill pan to high. Oil the grates lightly to prevent sticking.

    Grill skewers 10–12 minutes, turning every 2–3 minutes, until lamb is charred and cooked through.
