- 1.5 lb lamb shoulder or leg, cut into 1.5-inch cubes
- 1 whole (juiced) lemon
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 3 tbsp olive oil
- 1 medium red onion, cut into 1-inch chunks
- 3 sprigs fresh rosemary or thyme sprigs
