Ingredients
- 1 lb lamb shoulder or leg, cut into 1.5-inch cubes
- 3 tbsp olive oil
- 1 whole lemon (halved)
- 3 whole garlic cloves, minced
- 1 tbsp dried oregano
- 1 pinch salt and black pepper

Toss lamb with 2 tbsp olive oil, minced garlic, oregano, salt, and pepper. Let sit 5 minutes.

Heat remaining 1 tbsp olive oil in a large skillet over medium-high until smoking, about 1 minute.
