Ingredients

  • 1 lb lamb shoulder or leg, cut into 1.5-inch cubes
  • 3 tbsp olive oil
  • 1 whole lemon (halved)
  • 3 whole garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 pinch salt and black pepper

Instructions

    Toss lamb with 2 tbsp olive oil, minced garlic, oregano, salt, and pepper. Let sit 5 minutes.

    Heat remaining 1 tbsp olive oil in a large skillet over medium-high until smoking, about 1 minute.

    Working in one layer, sear lamb 3–4 minutes per side without moving until edges are golden and charred.

    Char lemon halves cut-side down in the skillet for 1 minute until the surface caramelizes and blackens.

    Squeeze charred lemon juice over the lamb, toss once, and serve immediately.
