Ingredients
- 1 lb lamb sirloin or leg, cut into 1.5-inch cubes
- 1 medium red onion, cut into 1-inch chunks
- 4 whole Roma tomatoes, halved lengthwise
- 1 lb baby potatoes, halved
- 4 pieces pita or flatbread
- ½ cup pomegranate seeds
- 3 tbsp olive oil
- 1 whole lemon, halved

Pat lamb dry and season generously with salt and pepper.

Thread lamb, red onion, and tomato chunks onto 4 skewers, alternating pieces.

Toss potatoes with 2 tbsp olive oil, salt, and pepper. Spread on a sheet pan.

Broil potatoes 8–10 minutes until edges brown. Add skewers to pan and broil 6–7 minutes, turning once—lamb edges should char and centers stay pink.

Brush flatbread with 1 tbsp oil and char under the broiler for 2–3 minutes, watching closely.

Plate skewers, flatbread, potatoes, and tomatoes. Sprinkle pomegranate seeds, squeeze lemon, serve immediately.
