Ingredients

  • 1 lb lamb shoulder or sirloin, cut into 1.5-inch cubes
  • 3 tbsp olive oil
  • 1 whole lemon (juiced + zested)
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ medium red onion, cut into 1.5-inch chunks

Instructions

    Toss lamb cubes with olive oil, lemon juice, lemon zest, minced garlic, paprika, salt, and pepper in a bowl.

    Thread lamb and onion chunks alternately onto metal skewers, leaving a small gap between pieces.

    Heat a grill pan or cast-iron skillet over medium-high until it's smoking hot, about 2 minutes.

    Place skewers on the hot pan and sear without moving for 2 minutes until edges char deeply.

    Rotate skewers 90 degrees and sear another 2 minutes, then flip and repeat until lamb is medium-rare, 8-10 minutes total.
