Ingredients

  • 4 chops lamb chops (1-inch thick)
  • 3 cloves garlic, minced
  • ¼ cup fresh cilantro or parsley, chopped
  • 1 whole lime
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ cup mint jelly

Instructions

  1. 1

Pat lamb chops dry with paper towels. Season generously with salt, pepper, cumin, and chili powder.

  2. 2

Heat oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

  3. 3

Sear chops 2 minutes per side without moving — they should look deeply browned and char on edges.

  4. 4

Push chops to the side. Add minced garlic to the empty pan space, cook 30 seconds until fragrant.

  5. 5

Toss chops with garlic and cilantro. Squeeze half the lime over the top. Transfer to a plate.

  6. 6

Serve chops hot with mint jelly on the side and remaining lime wedge for squeezing.
