Ingredients
- 1 cup basmati rice
- ¾ lb ground lamb
- 1 large yellow onion
- ⅓ cup yogurt, plain
- 1.5 tbsp biryani masala spice blend
- 3 tbsp ghee or butter
- 1.75 cup chicken or vegetable broth
- ¼ cup fresh mint and cilantro (chopped)

Rinse basmati rice under cold water until water runs clear. Thinly slice the onion.

Heat 2 tbsp ghee in a large pot over medium-high heat. Fry onion until deeply golden and crispy, ~5 minutes. Set aside.

Add remaining ghee to the pot. Brown ground lamb, breaking it up with a spoon, until no pink remains, ~4 minutes.

Stir in biryani masala, then yogurt. Add rice and stir to coat, 1 minute. Pour in broth.

Cover and simmer over medium heat until rice is tender and liquid is absorbed, ~10 minutes.

Fold in most of the crispy onions and fresh herbs. Top with remaining onions and serve hot.
