Ingredients
- ½ lb ground beef
- ¾ lb potatoes, waxy (yukon gold or similar)
- 4 oz pickled herring fillets
- ½ medium yellow onion
- 2 tbsp whole grain mustard
- 2 whole eggs
- 1 tbsp fresh dill or parsley (optional)

Dice potatoes into 1/2-inch cubes. Chop herring fillets into small pieces. Dice onion finely.

Heat 2 tbsp olive oil in a 12-inch skillet over medium-high. Brown ground beef, breaking apart with a spoon, until no pink remains, ~5 minutes.

Add potatoes and onion. Stir and cook without moving until underside crisps, ~6 minutes. Flip in sections and crisp the other side, ~4 minutes.

Fold in herring and mustard. Push hash to the edges of the skillet, making two wells in the center.

Crack eggs into the wells. Cover skillet and cook until whites set but yolks still jiggle, ~3 minutes.

Sprinkle with fresh dill if using. Serve straight from the pan with a pinch of salt and pepper.
