Ingredients

  • 1.5 lb beef sirloin or chuck, thinly sliced
  • 1 large yellow onion, sliced
  • ⅓ cup red wine vinegar
  • ¾ cup beef broth
  • 2 tbsp Dijon mustard
  • 1 tbsp tomato paste
  • 1 leaf bay leaf

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

    Working in two batches, sear beef 90 seconds per side without stirring. Season with salt and pepper. Transfer to a plate.

    In the same skillet, sauté sliced onion over medium until soft and edges turn golden brown, about 5 minutes.

    Add vinegar, broth, mustard, tomato paste, and bay leaf. Scrape up any brown bits from the bottom.

    Return beef and any juices to the skillet. Simmer gently until sauce thickens slightly, about 3 minutes.

    Discard bay leaf. Taste and adjust salt and pepper. Serve over noodles or with crusty bread.
