Ingredients

  • ½ cup butter, softened
  • ½ cup sugar
  • 2 whole eggs
  • 1 cup all-purpose flour
  • ½ tsp cardamom, ground
  • 1 tsp vanilla extract

    Cream butter and sugar together in a bowl until pale and fluffy, ~3 minutes.

    Add eggs one at a time, beating well after each addition until combined.

    Stir in flour, cardamom, and vanilla until the batter is smooth with no lumps.

    Heat a krumkake iron over medium heat for 2 minutes until it sizzles when water flicks on it.

    Spoon 1 tbsp batter onto the center of the iron, close the lid, and cook 30 seconds per side.

    Remove the cookie with a thin spatula and immediately roll it around a krumkake cone while hot.

    Slide the cone out and set the cookie on a cooling rack. Repeat with remaining batter.
