- ½ cup unsalted butter
- ¾ cup sugar
- ½ teaspoon salt
- ½ cup water
- 1 sheet puff pastry

In a bowl, mix 2 cups flour, 1/2 tsp salt, and 1/2 cup water until a dough forms. Knead briefly, then roll into a rectangle about 1/4-inch thick.

Spread 1/2 cup softened butter over the dough, leaving a 1-inch border. Sprinkle 1/2 cup sugar evenly over the butter.

Fold the dough into thirds like a letter, then roll it out again to a 1/4-inch rectangle. Repeat folding and rolling once more, then chill for 15 minutes.

Preheat oven to 400°F. Roll the dough to 1/4-inch thick, cut into 6 squares, and place each into a greased muffin tin.

Sprinkle the remaining 1/4 cup sugar over the tops. Bake until golden and caramelized, about 20-25 minutes, checking that the edges are deep brown and the sugar is bubbling.
