Ingredients
- 3 cups cooked rice
- ½ pound ground beef
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 medium carrot
- 1 medium zucchini
- 3 stalks scallions

Heat 1 tbsp sesame oil in a large skillet over medium-high. Add 0.5 lb ground beef and cook, breaking it up, until browned and no longer pink, about 5 minutes.

Add 1 diced carrot and 1 diced zucchini. Stir-fry until the vegetables are tender-crisp, about 4 minutes.

Stir in 2 tbsp gochujang and 1 tbsp soy sauce. Cook for 1 minute until fragrant and the beef is coated.

Add 3 cups cooked rice and 3 sliced scallions. Stir-fry, pressing and tossing, until the rice is hot and evenly colored, about 3 minutes.

Taste and add a pinch of salt or extra gochujang if you like. Serve hot, topped with a fried egg if desired.
