Ingredients

  • 1.5 pounds beef short ribs, flanken-cut
  • ⅓ cup soy sauce
  • 3 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar

Instructions

    Pat the beef short ribs dry with paper towels on both sides, then place them in a large bowl.

    Mince the garlic until the pieces are smaller than a grain of rice—about the size of pencil-tip dots.

    Pour 0.33 cup soy sauce, 3 tablespoons brown sugar, the minced garlic, 1 tablespoon sesame oil, and 1 tablespoon rice vinegar into the bowl with the beef.

    Stir and massage the marinade into the beef with your hands for 1 minute, making sure every piece is coated evenly.

    Preheat a grill or grill pan to high heat and wait until it is very hot and you can hold your hand 2 inches above it for only 2 seconds, about 3 minutes.

    Carefully place the beef ribs on the hot grill in a single layer, leaving 1 inch of space between each piece so they brown instead of steam.

    Grill without moving the beef for 2 minutes until the surface turns dark brown and caramelized, like burnt sugar.

    Flip each piece and grill the other side for 2 minutes until dark brown and caramelized.

    Transfer the grilled beef to a serving plate and let it rest for 2 minutes before serving.
