  • ¾ lb prime beef ribeye, 1-inch thick
  • 3 tbsp soy sauce
  • 1.5 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • ½ tsp ginger, minced
  • 2 tbsp sesame seeds and scallions, chopped

Instructions

    Whisk soy sauce, brown sugar, sesame oil, garlic, and ginger in a small bowl.

    Pat beef dry with paper towels. Season generously with salt and pepper on both sides.

    Heat a cast iron skillet or griddle over medium-high until it shimmers, about 2 minutes.

    Place beef on skillet. Sear 90 seconds per side without moving—edges should look opaque, center rare.
