Kimchi Black Bean Noodles

Ingredients

  • 2 servings fresh udon noodles
  • ½ lb ground beef
  • 1 cup kimchi
  • 3 tbsp black bean paste (chunjang)
  • 2 stalks green onions
  • 2 large eggs

Instructions

    Cook the 2 servings udon noodles in boiling water until tender, about 4 minutes. Drain and set aside.

    In a large skillet over medium-high heat, brown the 0.5 lb ground beef until no longer pink, about 5 minutes. Add the 1 cup kimchi and 3 tbsp black bean paste, stir-fry for 2 minutes until fragrant.

    Add the cooked noodles and 1/4 cup water to the skillet. Toss everything together over medium heat until the sauce coats the noodles, about 2 minutes.

    Fry the 2 eggs in a separate nonstick pan over medium heat until whites are set but yolks are runny, about 3 minutes.

    Divide noodles between bowls, top each with a fried egg and sprinkle with sliced green onions.
